  • ¼ tsp black pepper

  • Juice of ½ lime

  • 2 cups corn kernels (fresh, canned, or frozen)

  • 1 tbsp butter

  • ½ tsp chili powder

  • ¼ tsp smoked paprika

  • ¼ tsp salt

  • 2 tbsp Greek yogurt or sour cream

  • 1 tbsp mayonnaise

  • ¼ cup cotija or feta cheese, crumbled

  • 1 tbsp cilantro, chopped

  • Juice of ½ lime

  • 2 cups cooked rice (white, brown, or cauliflower rice)

  • ½ tsp garlic powder

  • 1 tbsp lime juice

  • 1 tbsp cilantro, chopped (optional)

  • ¼ cup Greek yogurt or sour cream

  • 1 tbsp mayonnaise

  • 1 tsp hot sauce (optional)

  • 1 tsp lime juice

  • ½ tsp garlic powder

  • ¼ tsp smoked paprika

  • Salt to taste


Instructions

Cook the Chicken

  • In a bowl, mix chicken, olive oil, paprika, chili powder, garlic powder, onion powder, cumin, salt, and lime juice.

  • Heat a skillet over medium heat and cook chicken for 6-8 minutes until golden and fully cooked.

2️⃣ Make the Street Corn

  • In the same pan, melt butter and add corn, chili powder, smoked paprika, and salt.

  • Sauté for 4-5 minutes until slightly charred.

  • Remove from heat and stir in Greek yogurt, mayo, cheese, cilantro, and lime juice.

3️⃣ Prepare the Rice

  • Mix cooked rice with garlic powder, lime juice, and cilantro.

4️⃣ Make the Sauce

  • Whisk together Greek yogurt, mayo, hot sauce, lime juice, garlic powder, paprika, and salt.

5️⃣ Assemble the Bowls

  • Divide rice into bowls, top with chicken, street corn, and drizzle sauce.

  • Garnish with extra cheese, cilantro, and lime wedges.
